My Home flavor Menu

This is a dish from a Ghanaian Lady who began cooking as the young age of 6 years. I wanted to present how to prepare various local & foreign dishes that are tasty and nutritious for my family. The items in this menu are compiled from years of experience. They are meant to be of great benefit to those with a very busy lifestyle, those who wish to provide wholesome food for themselves and their family. Teachers, caterers, home economists, nutritionists, housewives and the general public. It is great for everyone to have a copy of this handy at home as a reference menu for cooking and good health. This recipe is called:
Red - Red
Ingredients:
1 cup of beans, canned or natural (Pre-washed)
You can use your favorite type of bean, original is black-eyed beans
If you like your beans a little softer, use the canned ones
3/4 cup of oil, you can use Palm, Olive or Vegetable
1 Tablespoon ginger powder
1 Tablespoon garlic powder
1 Large tomato approx. 2.5oz or 75 grams
2 Tablespoons tomato paste
1 Tablet Maggi cube or 1 cup chicken broth
You can substitute salt free broth
1.5oz smoked fish, meat (your choice) or chicken
Rice, mashed potato or sweet potato (yams)
Salt & Pepper to taste
Cook :
Put beans into medium pan, add enough water to cover beans plus 1/2" over
Boil beans until tender, allow to rest 5 minutes before you handle them.
Drain any water from the beans and place into a bowl.
Place oil into pan and add the onion
Once the oil heats up, add the fresh tomato, tomato paste, garlic, ginger and maggi cube
Bring mixture to a boil, stirring constantly
Add smoked fish, meat or chicken, continue to boil for one minute
Reduce heat to a simmer taste and salt, pepper or any other seasonings
Add beans to the pan with 1/2 cup of water, return to a boil for 2 minutes.
Reduce heat and simmer 13 - 15 minutes, stir every 3 minutes.
Serve with rice, mashed potato or sweet potato.
