Summer Baked Salad


Ingredients:

17.5 oz (500g) carrot

17.5 oz (500g) broccoli

1 large onion

17.5 oz (500g) potato

3.5 oz (100g) french bean

17.5 oz (500g) cauliflower

1 large eggplant

2 tbs olive oil

2 tbs soy sauce

1 tbs sweet paprika

2 tbs maple syrup

salt and pepper to taste


Prep:

Cut the Broccoli, Cauliflower, French Beans into bit size pieces

Peel the carrots, onion, potato and eggplant, dice into bite size pieces

Place these ingredients into a bowl

Add 2 tbs olive oil, 2 tbs soy sauce, 2 tbs maple syrup, 1 tbs sweet paprika

salt and black pepper

Mix ingredients together until all vegetables are coated.


Cook:

Bake in (pre-heated) oven at 350 for 20 minutes

Can added cheese if desired, before baking or after
